Summer’s just about here, and I can’t wait for all the pool parties, picnics on the beach & dinners on my patio.
What am I dreading? Cooking over a hot stove or grill for hours. Who wants to heat up the entire house when it’s already sweltering?
So this summer, I’m turning my microwave into a professional grill with the MicroChef Grill. I can make juicy burgers, fall off the bone ribs, even delicious, crispy paninis in just a few simple steps.
And it’s all at microwave speed with very little clean-up. Plus, I don’t have to worry about soggy leftovers. With the Micro Chef Grill, my pizza crust is crispy and my burgers look & taste like they just came off the outdoor grill.

In the warmer weather I like to keep things light, so today I’m bringing you one of my newest recipes for summer: Fresh Mozzarella & Tomato Paninis. It calls for pesto, but you can also substitute fresh basil.
These paninis come out perfectly crisp & golden brown, every single time. They’re the perfect lunch or snack on a hot day.

Fresh Mozzarella & Tomato Panini
1 French roll, or roll of your choice
¼ fresh mozzarella cheese ball, sliced
1 serving fire-roasted bell peppers
½ tomato, sliced
2 Tbsp. pesto
- Cut roll in half. Spread pesto on the inside of each half.
- Layer peppers, mozzarella and tomato slices on bread.
- Place panini in the Grill. Make sure support ring is removed. Press lid directly onto sandwich.
- Place Grill in microwave. Cook for 3 minutes.
- Remove panini from the Grill.
- Serve with fresh fruit, salad, or your favorite summer side dish.
